Feb. 20th, 2011 @ 05:46 pm Recipe: Creamy beef curry
Current Mood: okayokay
Here's a recipe I use a lot with my slowcooker: creamy beef curry!

I'm not going to give you measurements and portions -- adjust the quantities to your taste and the number of people.

Take some stewing beef, and dice it. Brown the meat in a large pan.
Take two eggplants and dice them too. Add them to the pan to soften them up for a bit.
Add some curry paste. Rogan Josh and Tikka Massala are our favourites. Stir it into the mixture so that it spreads through the meat.
Then, add a can of coconut milk. Stir it all until the colour of the curry spreads evenly through the creamy coconut milk.
When it starts to boil, put it in your slowcooker for about six hours.
Serve with salad and rice!

Ooh, sounds delicious! If only I had 1) a slowcooker and 2) a boyfriend who eats meat.

Klinkt goed. Met cocosmelk wordt zo'n currygerecht altijd erg lekker.
