Yesterday, we bought three sweet potatoes from the toko, peeled and cut and boiled them. Then I mashed them, and added butter, salt, pepper and a pinch of sugar. This had to cool down overnight in the fridge.
So today we formed patties, rolled the patties around in the panko, then in beaten egg, then in the panko again -- and then it was into the hot oil!

The result. It totally tasted like I remember -- delicious! As a variation, we might mix in some vegetables next time: little pieces of carrot or peas -- but not for new year's eve, because of food allergies of our guests.
So, yes, total success. Took a lot of panko, though. And next time, we'll use our deep fryer for this, because that maintains a constant temperature and will prevent the croquettes picking up burned panko flakes -- ought to yield an even better result!
